Prof Paul Sabatier FRS(For)[1] HFRSE (Perancis: [sabatje]; 5 November 1854 – 14 Ogos 1941) merupakan seorang ahli kimia Perancis, lahir di Carcassonne. Pada tahun 1912, Sabatier dianugerahkan Hadiah Nobel dalam Kimia bersama Victor Grignard. Sabatier dihormati kerana kerja-kerja beliau meningkatkan penghidrogenan spesies organik dengan kehadiran logam.
